Prepare the Filling
In a large mixing bowl, combine the ground chicken, green onions, ginger, garlic, soy sauce, sesame oil, salt, and black pepper. Mix well until all ingredients are thoroughly combined.

Assemble the Dumplings
Place a dumpling wrapper in the palm of your hand. Add about 1 tablespoon of the chicken filling in the center of the wrapper. Moisten the edges of the wrapper with a little water, fold it in half, and pinch the edges to seal tightly. Repeat with the remaining wrappers and filling.

Cook the Dumplings
You can either steam or wok-sear the dumplings. To steam, place them in a steamer basket lined with parchment paper and steam over boiling water for about 10-12 minutes. To wok-sear, heat a bit of oil in a wok over medium-high heat, add the dumplings, and cook until the bottoms are golden brown, then add a splash of water, cover, and steam for 5 minutes.
