Instructions
Prepare the Lamb Skewers
In a large bowl, combine the ground lamb, cumin, coriander, fennel seeds, Sichuan peppercorns, salt, black pepper, and parsley. Mix until well combined.
Form the Skewers
Divide the lamb mixture into 6 equal portions and mold each portion around a skewer to form a long sausage shape.
Cook the Skewers
Preheat your grill or grill pan over medium-high heat. Cook the skewers for about 10-12 minutes, turning occasionally, until fully cooked and browned on all sides.
Make the Aioli
In a small bowl, mix together the mayonnaise, spring onions, ginger, garlic, lemon juice, and salt. Adjust seasoning to taste.
Prepare the Jerk Rub
In another bowl, combine brown sugar, cayenne pepper, allspice, thyme, cinnamon, and salt. Mix well.
Serve
Once the skewers are cooked, sprinkle the Chuan jerk rub over them and serve with the spring onion ginger aioli on the side.
