    Prepare the Udon Noodles

    Cook the udon noodles according to package instructions. Drain and set aside.

    Cook the Chicken

    In a large skillet or wok, heat sesame oil over medium-high heat. Add sliced chicken and cook until browned and cooked through, about 5-7 minutes. Remove chicken and set aside.

    Stir-Fry the Veggies

    In the same skillet, add bell pepper, carrot, and green onions. Stir-fry for 3-4 minutes until vegetables are tender-crisp.

    Add the Eggs

    Push the vegetables to one side of the skillet. Crack the eggs into the skillet and scramble until fully cooked, then mix with the veggies.

    Combine Everything

    Add the cooked udon noodles and chicken back into the skillet. Pour in soy sauce, oyster sauce, and chili paste. Toss everything together until well combined and heated through. Season with salt and pepper to taste.

    Serve

    Serve hot, garnished with additional green onions if desired.
