Prepare the Filling
In a mixing bowl, combine ground pork, chopped shrimp, green onions, ginger, soy sauce, sesame oil, salt, and pepper. Mix well until all ingredients are fully incorporated.

Form the Wontons
Place a teaspoon of the filling in the center of each wonton wrapper. Moisten the edges with water, fold over to form a triangle, and press to seal. Bring the two corners of the triangle together and pinch to seal, forming a wonton shape.

Cook the Wontons
In a pot of boiling water, gently add the wontons and cook for about 3-5 minutes or until they float to the surface and are cooked through. Remove with a slotted spoon and set aside.

Prepare the Broth
In a separate pot, bring the chicken bone broth to a simmer. Add sliced char siu and seasonal greens, and cook for an additional 2-3 minutes until the greens are tender.

Assemble the Dish
In a serving bowl, place the cooked egg noodles, top with the wontons, ladle the hot broth with char siu and greens over the top. Serve immediately.
