Satay Chicken Ingredients
Method
Cooking Directions
- 1
Prepare the Marinade
In a bowl, combine the minced lemongrass, ground fennel seeds, ground cumin, turmeric, minced garlic, soy sauce, brown sugar, and lime juice. Mix well to create the marinade.
- 2
Marinate the Chicken
Cut the chicken breasts into bite-sized pieces and add them to the marinade. Toss to coat the chicken evenly. Cover and refrigerate for at least 30 minutes or up to 2 hours for best flavor.
- 3
Prepare the Skewers
If using wooden skewers, soak them in water for 30 minutes to prevent burning. Thread the marinated chicken onto the skewers.
- 4
Cook the Skewers
Preheat a grill or grill pan over medium-high heat. Cook the skewers for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
- 5
Serve
Serve the satay chicken skewers with fresh cucumber slices on the side. Optionally, drizzle with spicy peanut sauce for added flavor.
