Prepare the Ribs
Preheat your oven to 300°F (150°C). Place the St. Louis ribs on a baking sheet lined with aluminum foil. Cover with another piece of foil and bake for 2.5 to 3 hours until tender.

Make the Char Siu Glaze
In a saucepan, combine soy sauce, hoisin sauce, brown sugar, five-spice powder, minced garlic, grated ginger, and rice vinegar. Bring to a simmer and cook for about 10 minutes until slightly thickened.

Glaze the Ribs
Remove the ribs from the oven and increase the temperature to 400°F (200°C). Brush the char siu glaze generously over the ribs, then return to the oven for an additional 15-20 minutes, basting with more glaze halfway through.

Prepare Fried Bao Buns
While the ribs are finishing, prepare your bao buns according to package instructions or fry them in a pan until golden brown.

Slice the glazed ribs and serve with fried bao buns and spicy housemade pickles on the side.
