Prepare the Noodles
Cook the wide rice noodles according to package instructions. Drain and set aside.

Cook the Proteins
In a large wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the shrimp and chicken, and stir-fry until cooked through, about 5-7 minutes. Remove from the wok and set aside.

Fry the Lap Cheong
In the same wok, add another tablespoon of vegetable oil. Add the sliced lap cheong and stir-fry for 2-3 minutes until slightly crispy.

Add Veggies and Eggs
Add the bell pepper, carrot, and green onions to the wok. Stir-fry for 2-3 minutes until they are tender. Push the veggies to the side and pour the beaten eggs into the wok, scrambling them until fully cooked.

Combine Everything
Add the cooked shrimp, chicken, and the drained rice noodles to the wok. Pour the soy sauce and pork broth over the mixture. Toss everything together until well combined and heated through, about 2-3 minutes.

Season with salt and pepper to taste. Serve hot and enjoy your C.K.T.
