1. Prepare the Chicken

In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium heat. Add the diced chicken breast and cook until it is no longer pink, about 5-7 minutes. Remove chicken from the skillet and set aside.

2. Scramble the Eggs

In the same skillet, add the beaten eggs and scramble them until fully cooked. Remove and set aside with the chicken.

3. Sauté the Vegetables

Add the remaining tablespoon of vegetable oil to the skillet. Add the diced carrots and cook for about 3 minutes until slightly softened. Then, add the frozen peas and chopped green onions, cooking for an additional 2 minutes.

4. Combine Ingredients

Stir in the cooked rice, chicken, and scrambled eggs. Pour the soy sauce over the mixture and season with salt and black pepper. Stir-fry for about 5 minutes until everything is heated through and well combined.

5. Serve
