Prepare the Ingredients
Gather all the ingredients and ensure that the chicken is cooked and diced, and the rice is cold.

Cook the Eggs
Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium heat. Add the beaten eggs and scramble until fully cooked. Remove the eggs from the skillet and set aside.

Stir-Fry the Chicken and Vegetables
In the same skillet, add another tablespoon of vegetable oil. Add minced garlic and cook for about 30 seconds until fragrant. Add the diced chicken and cook until heated through.

Add the Rice
Add the cold jasmine rice to the skillet, breaking apart any clumps. Stir-fry for about 2-3 minutes until the rice is heated.

Add Seasoning
Pour in the soy sauce and sesame oil, and sprinkle with salt and pepper. Mix well to ensure all ingredients are coated.

Combine Everything
Add the scrambled eggs and chopped green onions to the skillet. Stir everything together until well combined and heated through. Adjust seasoning if needed.
