Cooking Instructions
- 1
Prepare the Chicken
Clean the whole chicken and pat it dry. Rub the chicken inside and out with salt, pepper, minced garlic, and ginger. Let it marinate for at least 1 hour.
- 2
Make the Batter
In a large bowl, combine all-purpose flour, cornstarch, and curry powder. In another bowl, beat the eggs and mix in coconut milk. Gradually add the wet ingredients to the dry ingredients until you have a smooth batter.
- 3
Fry the Chicken
Heat vegetable oil in a deep fryer or large pot to 350°F (175°C). Dip the marinated chicken into the batter, ensuring it is well coated. Carefully place it in the hot oil and fry for about 15-20 minutes or until golden brown and cooked through. Remove and drain on paper towels.
- 4
Prepare Sticky Rice
Soak the rice in water for at least 4 hours or overnight. Drain and steam the rice in a bamboo steamer lined with cheesecloth for about 30 minutes until cooked and sticky.
- 5
Warm the Roti
Heat the roti on a skillet for a few minutes on each side until warm and slightly crispy.
- 6
Serve
Serve the fried chicken with sticky rice, warmed roti, and a side of curry. Enjoy your Hat Yai feast!
