1. Prepare the Ingredients
Start by chopping the onion, carrots, and celery into small pieces. Mince the garlic cloves.
2. Sear the Chicken
In a large pot or Dutch oven, heat the olive oil over medium-high heat. Season the chicken thighs with salt and black pepper, then add them to the pot, skin-side down. Sear for about 5-7 minutes until golden brown. Flip and sear the other side for an additional 5 minutes. Remove the chicken and set aside.
3. Sauté the Vegetables
In the same pot, add the chopped onion, carrots, celery, and minced garlic. Sauté for about 5 minutes until the vegetables start to soften.
4. Deglaze the Pot
Pour in the white wine to deglaze the pot, scraping up any browned bits from the bottom. Allow it to simmer for 2-3 minutes.
5. Add Broth and Herbs
Return the chicken thighs to the pot. Add the chicken broth, bay leaves, thyme, and additional salt and pepper to taste. Bring the mixture to a gentle simmer.
6. Braise the Chicken
Cover the pot and reduce the heat to low. Let the chicken braise for about 45-60 minutes, or until the chicken is tender and cooked through.
