    Prepare the Brisket

    Trim excess fat from the beef brisket and cut it into bite-sized pieces.

    Sauté the Paste

    In a large pot, heat the vegetable oil over medium heat. Add the green curry paste and sauté for about 2-3 minutes until fragrant.

    Cook the Brisket

    Add the brisket pieces to the pot and stir well to coat them in the curry paste. Cook for about 5 minutes.

    Add Liquids

    Pour in the coconut milk and water. Stir to combine and bring to a gentle simmer.

    Simmer the Curry

    Add the krachai, fish sauce, and brown sugar. Cover the pot and let it simmer for about 1.5 to 2 hours, or until the brisket is tender.

    Add Peppers and Basil

    In the last 15 minutes of cooking, add the sliced red and yellow bell peppers. Stir in the Thai basil leaves and lime juice.

    Serve

    Once cooked, taste and adjust seasoning if necessary. Serve hot with rice or noodles.
