Prepare the Cucumber
Using a vegetable peeler or a knife, create long ribbons of cucumber. Set aside for garnishing.

Muddle the Mint
In a shaker, muddle the mint leaves gently to release their oils.

Mix the Ingredients
Add the Barkeep vodka, lemon juice, and simple syrup to the shaker. Fill the shaker with ice.

Shake
Shake well until the mixture is chilled.

Strain and Serve
Strain the mixture into a glass filled with ice and top with club soda.

Garnish your drink with the cucumber ribbons. Optionally, add a mint sprig for extra aroma.
