Cake Preparation

Preheat the Oven
Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.

Mix Dry Ingredients
In a large bowl, sift together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.

Combine Mixtures
Add the wet ingredients to the dry ingredients and mix until just combined. Carefully stir in the boiling water until the batter is smooth.

Bake the Cake
Divide the batter evenly between the prepared cake pans. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.

Cool the Cakes
Let the cakes cool in the pans for 10 minutes, then turn them out onto a wire rack to cool completely.

Prepare Ganache
For the chocolate ganache, heat 1 cup of heavy cream until it just begins to simmer. Remove from heat and stir in 8 oz of chopped chocolate until smooth.

Assemble the Cake
Once the cakes are completely cool, place one layer on a serving plate, spread a layer of ganache on top, then place the second layer on top. Pour the remaining ganache over the top and let it drip down the sides.
