Prepare the Sage Mayo
In a bowl, combine the mayonnaise, chopped sage leaves, lemon juice, salt, and black pepper. Mix well and set aside.

Prepare the Breading
In a shallow dish, combine the all-purpose flour and cornstarch. In another bowl, whisk together the egg and milk.

Coat the Crabs
Dip each soft shell crab first into the flour mixture, then into the egg mixture, and finally back into the flour mixture, ensuring they are well coated.

Fry the Crabs
In a large skillet, heat the oil over medium-high heat. Once hot, carefully add the coated soft shell crabs and fry for about 3-4 minutes on each side until golden brown and crispy. Remove and drain on paper towels.

Assemble the Sandwich
On each potato bun, spread a generous amount of sage mayo, add a lettuce leaf, a slice of tomato, and place the crispy soft shell crab on top. Close the sandwich with the top half of the bun.

Serve the crispy soft shell crab sandwiches immediately with extra sage mayo on the side.
