Prepare the Duck
Preheat the oven to 400°F (200°C). Score the skin of the duck breast in a crisscross pattern, being careful not to cut into the meat. Season both sides with salt and black pepper.

Roast the Duck
Heat olive oil in an oven-safe skillet over medium-high heat. Place the duck breast skin-side down and sear for about 5-7 minutes until the skin is crispy. Flip the duck breast and transfer the skillet to the preheated oven. Roast for 10-15 minutes, or until the internal temperature reaches 135°F (57°C) for medium-rare.

Rest the Duck
Remove the duck from the oven and let it rest for 5 minutes before slicing.

Assemble the Sandwich
Slice the potato buns in half. Spread Dijon mustard on the bottom half of each bun. Layer with arugula, sliced tomatoes, and the sliced duck breast. Top with the other half of the bun.
