Prepare the Potatoes
Wash and peel the russet potatoes. Cut them into thin strips to form fries.

Soak the Fries
Soak the cut fries in cold water for at least 30 minutes to remove excess starch. This helps achieve crispier fries.

Heat the Oil
In a deep fryer or large pot, heat the vegetable oil to 350°F (175°C).

Fry the Potatoes
Drain the soaked fries and pat them dry with a paper towel. Carefully add a batch of fries to the hot oil. Fry until golden brown, about 3-4 minutes. Remove and drain on paper towels.

Season and Toss
While the fries are still hot, sprinkle with salt and black pepper, then drizzle with truffle oil. Toss to coat evenly.

Garnish
If desired, chop fresh parsley and sprinkle over the fries before serving.
