    Prepare the Cedar Plank

    Soak the cedar plank in water for at least 1 hour before grilling to prevent it from burning.

    Make the 'nduja Butter

    In a small bowl, mix the nduja sausage with softened unsalted butter until fully combined. Set aside.

    Caramelize the Onions

    Slice the onions thinly. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the onions and cook, stirring occasionally, until they are golden brown and caramelized, about 15-20 minutes. Set aside.

    Prepare the Potatoes and Asparagus

    Preheat the oven to 400°F (200°C). Toss fingerling potatoes with olive oil, salt, and black pepper. Place them on a baking sheet and roast for about 25-30 minutes until tender. Add asparagus to the baking sheet for the last 10 minutes of cooking.

    Grill the Redfish

    Preheat the grill to medium-high heat. Place the soaked cedar plank on the grill and close the lid for 5 minutes to heat the plank. Place the redfish fillets on the plank, spread the nduja butter on top, and add the caramelized onions. Close the grill lid and cook for about 15-20 minutes until the fish is cooked through and flakes easily with a fork.

    Serve

    Once the fish is done, carefully remove the cedar plank from the grill. Serve the redfish with roasted fingerling potatoes and asparagus on the side.
