Tamale Filling and Dough

Preparation and Cooking
Add the ground beef (or chicken) to the skillet, and cook until browned. Drain excess fat.
Stir in cumin, chili powder, black pepper, and salt. Mix well and let it cook for another 5 minutes.
Prepare the Dough
In a large bowl, mix cornmeal and chicken broth until well combined. Allow the mixture to sit for about 10 minutes.
Once rested, mix in salt and form the dough into small discs.
Assemble the Tamales
Take a piece of dough, flatten it, and place a spoonful of filling in the center. Fold the dough over the filling and pinch to seal.
Place the tamales upright in a steamer basket and steam for about 1 hour, or until the dough is firm.
Serve
Serve hot with hot sauce and crackers on the side.
