Preparation Steps

Prepare the Shrimp
In a large bowl, toss the shrimp with Cajun seasoning until evenly coated. Let marinate for 15 minutes.

Fry the Shrimp
In a large skillet, heat the cooking oil over medium-high heat. Once hot, add the seasoned shrimp and fry until golden brown and cooked through, about 3-4 minutes. Remove and drain on paper towels.

Prepare the Bread
While the shrimp are frying, cut the Leidenheimer’s French bread loaves in half lengthwise. You can toast them lightly if desired.

Assemble the Po-Boys
Spread mayonnaise on both sides of the bread. Layer the fried shrimp on the bottom half, followed by shredded lettuce, sliced tomato, and pickles.

Serve
Close the sandwich and serve immediately with seasoned house chips on the side.
