Prepare the Hollandaise Sauce

In a bowl, whisk together the egg yolks, lemon juice, and a pinch of salt. Slowly drizzle in melted butter while whisking continuously until the sauce thickens. Stir in mayonnaise and hot sauce, then season with salt and pepper to taste. Set aside.

Fry the Oysters

Heat oil in a skillet over medium-high heat. Dredge oysters in flour and fry until golden brown, about 2-3 minutes per side. Remove and drain on paper towels.

Poach the Eggs

Bring a pot of water to a gentle simmer. Crack each egg into a small bowl, then gently slide into the water. Cook for 3-4 minutes until whites are set and yolks are still runny. Remove with a slotted spoon.

Toast the French Bread

In another skillet, melt butter and toast the slices of French bread until golden on both sides.

Assemble the Benedict

Place a slice of toasted French bread on each plate. Top with fried oysters, a poached egg, and drizzle with hollandaise sauce. Garnish with chopped chives.

Prepare the Green Salad

In a bowl, toss mixed greens with olive oil, salt, and pepper. Serve alongside the Fried Oyster Benedict.
