    Cook the Vegetables

    Boil the potatoes until tender. Peel and mash them. In a pan, heat oil, add cumin seeds, chopped onions, ginger, and sauté until the onions are translucent. Add carrots, peas, and spices. Cook until the vegetables are soft. Mix in the mashed potatoes and adjust seasoning.

    Prepare the Dough

    In a bowl, mix 2 cups of all-purpose flour with a pinch of salt and enough water to form a smooth, pliable dough. Cover and let it rest for 30 minutes.

    Shape the Samosas

    Divide the dough into small balls. Roll out each ball into a thin circle. Cut it in half to form two semicircles. Take one semicircle, form a cone by folding it and sealing the edge with water. Fill with the vegetable mixture and seal the open edge by pressing firmly.

    Fry the Samosas

    In a deep pan, heat oil for frying. Once hot, carefully add the samosas in batches. Fry until golden brown and crispy. Remove and drain on paper towels.

    Serve

    Serve the crispy vegetable samosas hot with tamarind or mint chutney.
