Prepare the Base

Heat oil or ghee in a pan over medium heat. Add cumin seeds and let them splutter. Then add the chopped onions and sauté until golden brown.

Add Aromatics

Stir in the grated ginger, minced garlic, and slit green chili. Cook for an additional 2-3 minutes until fragrant.

Incorporate Tomatoes and Spices

Add the chopped tomatoes, turmeric powder, coriander powder, cumin powder, and salt. Cook until the tomatoes soften and the mixture becomes a thick paste.

Add Chickpeas

Add the chickpeas to the pan and mix well. If using canned chickpeas, rinse them first. Add a little water if the mixture is too thick.

Simmer

Cover and let it simmer for about 10-15 minutes, allowing the flavors to blend.

Finish with Garam Masala

Stir in the garam masala and lemon juice. Cook for an additional 2 minutes.

Garnish and Serve

Remove from heat, garnish with fresh coriander leaves, and serve hot with Pyaz Kulcha and Achaar.
