Method

Saag Makai

    Prepare the Spinach

    Blanch the spinach in boiling water for 2 minutes, then drain and rinse with cold water. Chop finely.

    Cook the Base

    In a pan, heat oil or ghee. Add cumin seeds and allow to sizzle. Add chopped onions, garlic, and ginger, sautéing until onions are translucent.

    Add Spinach and Corn

    Add chopped spinach and corn kernels to the pan. Stir well.

    Season and Finish

    Add turmeric, garam masala, and salt. Cook for 5-7 minutes on low heat, stirring occasionally.

Dal Lasooni

    Cook the Lentils

    Rinse the yellow lentils and boil them with water and turmeric until soft, about 20-25 minutes.

    Prepare the Tadka

    In a separate pan, heat oil or ghee. Add cumin seeds and sliced garlic, frying until garlic turns golden.

    Combine and Simmer

    Add chopped onions and tomatoes to the tadka, sautéing until soft. Add the cooked lentils and salt, simmer for 10 minutes.

    Garnish

    Finish with chopped cilantro before serving.

Basmati Rice

    Rinse and Boil

    Rinse the basmati rice under cold water until the water runs clear. In a pot, combine rice, water, and salt. Bring to a boil.

    Cook the Rice

    Cover and reduce heat to low, cooking for 15 minutes, or until rice is fluffy and water is absorbed.
