Petit Fours Directions
- 1
Prepare the Chocolate Truffle
Fold in the candied fennel seeds and butter until well combined. Allow the mixture to cool at room temperature, then refrigerate until set (about 1-2 hours).
- 2
Shape the Truffles
Once the mixture is set, use a melon baller or small scoop to form small balls. Roll each ball in your hands to smooth them out, then dust with cocoa powder or chopped nuts if desired.
- 3
Prepare Kaju Katli
In a food processor, grind the cashews into a fine powder. In a non-stick pan, combine the cashew powder, sugar, milk, and cardamom powder. Cook on low heat, stirring continuously until the mixture thickens and starts to leave the sides of the pan.
- 4
Shape Kaju Katli
Once the mixture is ready, spread it onto a greased plate or parchment paper. Use a rolling pin to flatten it to a desired thickness. Cut into diamond shapes while still warm.
- 5
Assemble and Serve
Arrange the chocolate truffles and kaju katli on a decorative platter. Serve at room temperature.
