    Prepare the lamb

    In a large bowl, mix the lamb pieces with yogurt, garlic, ginger, and salt. Let marinate for at least 1 hour, preferably overnight in the refrigerator.

    Sauté the onions

    In a heavy-bottomed pot, heat vegetable oil over medium heat. Add chopped onions and sauté until golden brown.

    Add spices

    Add cumin seeds, coriander powder, turmeric powder, and red chili powder to the pot. Stir for about 1-2 minutes until fragrant.

    Cook the lamb

    Add the marinated lamb along with the tomato puree to the pot. Stir well to coat the lamb with the spice mixture.

    Add water

    Pour in the water, bring to a boil, then reduce heat to low, cover, and let simmer for 1.5 to 2 hours, or until the lamb is tender.

    Finish with garam masala

    Once the lamb is tender, stir in the garam masala and adjust salt to taste. Cook for an additional 10 minutes.
