Cold Brew the Tea
In a large pitcher, combine Sikkim and Assam tea leaves with 4 cups of cold water. Let the mixture steep in the refrigerator for at least 4 hours, or overnight for a stronger flavor.

Prepare the Seasonal Fruit
While the tea is brewing, wash and slice the seasonal fruit of your choice into bite-sized pieces.

Combine and Sweeten
After the tea has steeped, strain the tea leaves using a fine mesh sieve or tea strainer. If desired, stir in honey or sweetener to taste.

Serve
Fill glasses with ice cubes, pour the cold brewed tea over the ice, and add the sliced seasonal fruit to each glass. Stir gently and serve chilled.
