1. Prepare the Rice

Rinse the basmati rice under cold water until the water runs clear. Soak the rice in water for about 30 minutes, then drain.

2. Cook the Rice

In a large pot, add the soaked rice and 4 cups of milk. Cook on medium heat, stirring occasionally to prevent sticking, until the rice is tender (about 15-20 minutes).

3. Add Flavorings

Once the rice is cooked, add sugar, crushed cardamom pods, saffron strands, and vanilla extract. Stir well and let it simmer for another 5-10 minutes until it thickens slightly.

4. Add Nuts and Raisins

Stir in the chopped nuts and raisins. Cook for an additional 2-3 minutes, then remove from heat.

5. Serve

Let the kheer cool slightly before serving. It can be enjoyed warm or chilled.
