Hand Pie Preparation
1. Make the Dough
In a large bowl, combine the flour and salt. Cut in the cold butter until the mixture resembles coarse crumbs. Stir in the cold water until the dough comes together. Wrap in plastic wrap and refrigerate for at least 30 minutes.
2. Prepare the Filling
Once the dough has chilled, preheat the oven to 375°F (190°C). In a bowl, mix the Taleggio cheese with black pepper. Set aside.
3. Assemble the Hand Pies
On a floured surface, roll out the dough to about 1/8 inch thickness. Cut into circles (about 4-5 inches in diameter). Place a spoonful of the cheese mixture in the center of each circle. Fold the dough over to create a half-moon shape and seal the edges with a fork. Brush the tops with beaten egg.
4. Bake the Pies
Place the hand pies on a baking sheet lined with parchment paper. Bake for 25-30 minutes, or until golden brown. Remove from oven and let cool slightly.
