Vanilla Créme Anglaise

Method

French Toast Preparation

1

Prepare the Custard

In a mixing bowl, whisk together eggs, milk, vanilla extract, and cinnamon until well combined.

2

Soak the Bread

Dip each slice of bread into the custard mixture, ensuring both sides are fully coated. Allow excess to drip off.

3

Cook the Toast

In a skillet, melt butter over medium heat. Cook the soaked bread slices for 3-4 minutes on each side, until golden brown.

Orange-Maple Glaze Preparation

4

Combine Ingredients

In a small saucepan, combine maple syrup, orange juice, and orange zest. Bring to a simmer over medium heat.

5

Reduce Glaze

Let the mixture simmer for about 5-7 minutes until slightly thickened, then remove from heat.

Vanilla Créme Anglaise Preparation

6

Heat the Cream

In a saucepan, heat the heavy cream and milk over medium heat until just boiling. Remove from heat.

7

Whisk Egg Yolks

In a separate bowl, whisk together egg yolks and sugar until pale and thick.

8

Combine and Cook

Slowly pour the hot cream into the egg mixture while whisking constantly. Return to the saucepan and cook over low heat, stirring until thickened.

9

Strain and Flavor

Strain the mixture through a fine sieve and whisk in vanilla bean or extract. Let cool slightly.
