Preparation
Prepare the Spiced Corn Nuts
In a large pot, heat the olive oil over medium heat. Add the dried corn kernels and stir to coat. Cook, stirring frequently, until the corn begins to pop, about 3-5 minutes. Add smoked paprika, cayenne pepper, garlic powder, salt, and black pepper. Continue to cook until the corn nuts are golden and crispy, about 10-15 minutes. Remove from heat and set aside.
Prepare the House Olives
In a small bowl, combine the mixed olives with olive oil, fresh thyme, orange zest, and red chili flakes. Toss to coat the olives evenly. Let them marinate for at least 10 minutes to absorb the flavors.
Serve
Serve the spiced corn nuts warm alongside the marinated house olives. Garnish with pickled orange slices and chilies if desired.
