Roasting the Beets

Preheat your oven to 400°F (200°C). Wash the beets thoroughly and wrap each beet in aluminum foil. Place them on a baking sheet and roast for about 45-60 minutes or until they are fork-tender. Remove from the oven, let them cool slightly, then peel and cut into wedges.

Preparing the Sausage

While the beets are roasting, slice the Chinese sausage into thin pieces. In a skillet over medium heat, cook the sausage until it is crispy and browned, about 5-7 minutes. Remove and set aside.

Combining Ingredients

In a bowl, mix the roasted beet wedges with the crispy Chinese sausage, fresh herbs, olive oil, salt, and black pepper. Toss gently to combine.

Serving

Serve the roasted beets and sausage mixture topped with a generous dollop of crème fraîche. Enjoy warm or at room temperature.
