    Preparing the Beef Tongue

    Rinse the beef tongue under cold water and place it in a large pot. Cover with water and add salt, pepper, cumin, garlic, and onion. Bring to a boil, then reduce to a simmer and cook for 2.5 to 3 hours until tender.

    Once cooked, remove the tongue from the pot and let it cool slightly. Peel off the skin and slice the meat into thin pieces. You can also shred it for a more casual slider presentation.

    Slice the slider buns in half. On the bottom half, layer the shredded tongue, top with avocado slices, chopped cilantro, a dollop of sour cream, and a squeeze of lime juice. Drizzle with hot sauce to taste.
