    Prepare the Cauliflower

    Cut the cauliflower into florets and steam until tender, about 10-15 minutes. Once cooked, allow it to cool slightly, then blend until smooth.

    Make the Gnocchi Dough

    In a large bowl, combine the cauliflower puree, flour, salt, lemon zest, and black pepper. Mix until a dough forms. If the dough is too sticky, add a little more flour as necessary.

    Shape the Gnocchi

    On a floured surface, roll portions of the dough into long ropes, about 1 inch thick. Cut into 1-inch pieces and, if desired, press with a fork to create ridges.

    Cook the Gnocchi

    Bring a large pot of salted water to a boil. Drop the gnocchi into the boiling water and cook until they float to the surface, about 2-3 minutes. Remove with a slotted spoon and set aside.

    Prepare the Sauce

    In a skillet, heat olive oil over medium heat. Add the oyster mushrooms and sauté until golden brown, about 5-7 minutes. Stir in the mascarpone cheese and lemon juice, mixing until well combined and creamy.

    Combine and Serve

    Add the cooked gnocchi to the skillet with the mushroom sauce, tossing gently to coat. Serve hot, garnished with fresh parsley.
