Method

Prepare the Beef Tartare

    Mix the Beef Tartare

    In a bowl, combine the finely chopped beef tenderloin, egg yolk, capers, shallot, Dijon mustard, Worcestershire sauce, salt, and black pepper. Mix gently until well combined.

    Taste and adjust seasoning if necessary. Set aside in the refrigerator while preparing the aioli and bread.

Make the Smoked Mussel Aioli

    Blend the Aioli

    In a food processor, combine the smoked mussels, mayonnaise, minced garlic, lemon juice, salt, and black pepper. Blend until smooth and creamy.

    Taste and adjust seasoning if necessary. Transfer to a serving bowl and refrigerate until ready to use.

Prepare the Grilled Bread

    Grill the Bread

    Preheat a grill or grill pan over medium-high heat.

    Brush the baguette slices with olive oil on both sides. Grill for 2-3 minutes on each side or until golden brown and crispy.

Assemble the Dish

    To serve, place grilled bread slices on a plate. Top each slice with a generous portion of beef tartare and a dollop of smoked mussel aioli.
