Toasted Bread

    Prepare the Bread

    Preheat your toaster or a skillet over medium heat. Brush the slices of sourdough bread with olive oil and sprinkle a pinch of salt on both sides.

    Toast the Bread

    Toast the bread slices in a toaster or place them in the skillet. Cook until golden brown and crispy, about 3-4 minutes on each side.

Guacamole

    Make the Guacamole

    Cut the ripe avocado in half, remove the pit, and scoop the flesh into a bowl. Mash the avocado with a fork until smooth, leaving some chunks if desired.

    Add Ingredients

    Add lime juice, chopped cilantro, diced red onion, salt, and black pepper to the mashed avocado. Mix until well combined.

    Cook the Eggs

    In a skillet, melt the butter over medium heat. Crack the eggs into the skillet. Cook until the whites are set and the yolks are still slightly runny for fried eggs, or poach the eggs in simmering water for about 3-4 minutes until cooked to your liking.

Assemble

    Combine and Serve

    Spread a generous amount of guacamole on each slice of toasted bread. Top with a cooked egg and arrange slices of smoked salmon on top. Serve immediately and enjoy!
