Jelly Preparation

1. Prepare the Blood Oranges

Wash the blood oranges thoroughly. Cut them in half and juice them until you have 4 cups of blood orange juice. Remove any seeds and pulp.

2. Mix Ingredients

In a large pot, combine the blood orange juice, 1 cup of water, and salt. Stir in the granulated sugar until fully dissolved. Add the pectin to the mixture.

3. Boil the Mixture

Bring the mixture to a boil over medium-high heat, stirring constantly. Once it reaches a rolling boil, continue boiling for 1-2 minutes.

4. Add Lemon Juice

Remove the pot from heat and stir in the lemon juice. Ensure it is well mixed.

5. Jar the Jelly

Pour the hot jelly into sterilized jars, leaving about 1/4 inch of headspace at the top. Ensure there are no air bubbles by running a knife around the inside of the jar.

6. Seal the Jars

Wipe the rims of the jars with a clean cloth to remove any residue. Place the lids on the jars and screw on the rings until they are fingertip-tight.

7. Process the Jars

Process the jars in a boiling water bath for 5-10 minutes to ensure they are sealed properly.

8. Cool and Store

Remove the jars from the water bath and let them cool completely on a clean towel. Once cooled, check the seals and store the jelly in a cool, dark place.
