1. Prepare the Clementines

Wash the clementines thoroughly under running water. Peel the clementines and separate the segments. Remove any seeds.

Place the clementine segments in a blender and blend until smooth. Strain the juice through a fine mesh sieve into a bowl, discarding the pulp.

In a large saucepan, combine the clementine juice, lemon juice, and water. Mix well.

4. Add Pectin

Sprinkle the pectin over the mixture and stir well. Let it sit for about 5 minutes.

5. Bring to Boil

Place the saucepan over medium-high heat and bring the mixture to a boil, stirring frequently.

6. Add Sugar

Once boiling, add the granulated sugar all at once. Stir continuously until the sugar is completely dissolved and the mixture returns to a rolling boil.

7. Boil the Jelly

Boil for an additional 1-2 minutes, or until the mixture reaches the desired consistency.

8. Jar Preparation

While the jelly is boiling, prepare canning jars by sterilizing them in boiling water.

9. Fill the Jars

Remove the jars from the boiling water and fill them with the hot clementine jelly, leaving about 1/4 inch headspace.

10. Seal the Jars

Wipe the rims of the jars with a clean damp cloth to remove any residue. Place the sterilized lids on top and screw on the metal rings until fingertip tight.

11. Process the Jars

Process the jars in a boiling water bath for 5-10 minutes to ensure they are sealed properly.

12. Cool and Store

Remove the jars from the water bath and let them cool on a clean towel or rack. Once cool, check the seals and store in a cool, dark place.
