Pasta Preparation

    Cook the Paccheri

    Bring a large pot of salted water to a boil. Add the paccheri pasta and cook according to package instructions until al dente, usually about 10-12 minutes. Stir occasionally to prevent sticking.

    Drain the Pasta

    Once cooked, drain the pasta in a colander and set aside, reserving a cup of pasta water for later use.

    Sauté the Aromatics

    In a large skillet, heat the olive oil over medium heat. Add the finely chopped red onion and cook until translucent, about 5 minutes. Add minced garlic and sauté for another minute until fragrant.

    Add Tomatoes

    Stir in the halved cherry tomatoes, chopped Roma tomatoes, and sun-dried tomatoes. Cook for about 5-7 minutes until the tomatoes start to soften.

    Combine with Canned Tomatoes

    Add the canned diced tomatoes and tomato paste to the skillet. Stir well to combine and let it simmer for 15-20 minutes, stirring occasionally.

    Season the Sauce

    Add torn fresh basil leaves, salt, black pepper, and sugar to the sauce. Stir well and let it simmer for an additional 5 minutes.

Combining and Serving

    Combine Pasta and Sauce

    Add the drained paccheri pasta directly into the skillet with the sauce. Toss gently to combine, adding reserved pasta water as needed to achieve desired consistency.

    Plate the paccheri and sauce, garnishing with additional fresh basil leaves and grated Parmesan cheese. Serve immediately.
