Dough Preparation

Activate Yeast
In a small bowl, combine warm milk (about 37°C) and active dry yeast. Let it sit for about 10 minutes until frothy.

Mix Dry Ingredients
In a large bowl, whisk together all-purpose flour, granulated sugar, and salt.

Knead the Dough
Transfer the dough to a lightly floured surface and knead for about 10-15 minutes until smooth and elastic.

First Rise
Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1-2 hours or until doubled in size.
Filling and Shaping

Prepare Fillings
In a small bowl, mix the candied orange peel, raisins, and rhum. Let them soak for about 15 minutes.

Incorporate Fillings
Once the dough has risen, punch it down and transfer it to a floured surface. Add the soaked fruit filling and knead gently to incorporate.

Shape the Dough
Shape the dough into a large oval or traditional colomba shape and place it in a pre-greased colomba mold or a loaf pan.

Cover the dough again and let it rise for another 1 hour until it has risen significantly.

Prepare Topping
Preheat the oven to 180°C (350°F). In a small bowl, combine sliced almonds and melted butter.

Bake
Bake in the preheated oven for about 35-40 minutes or until golden brown and a toothpick inserted in the center comes out clean.

Remove from the oven and allow to cool in the mold for 10 minutes before transferring to a wire rack to cool completely.
