Cook the Quinoa
Rinse 1 cup of quinoa under cold water. In a medium saucepan, combine the rinsed quinoa with 2 cups of water. Bring to a boil over medium-high heat. Once boiling, reduce the heat to low, cover, and let simmer for about 15 minutes or until the quinoa is fluffy and the water is absorbed. Remove from heat and allow to cool.

Prepare the Vegetables
While the quinoa is cooling, chop 2 cups of mixed bell peppers into small, bite-sized pieces. Set aside in a large mixing bowl.

Combine Ingredients
Once the quinoa is cooled, fluff it with a fork and add it to the bowl with the chopped bell peppers. Add 1 cup of crumbled feta cheese and 0.5 cup of pitted and halved Taggiasca olives to the mixture.

Dress the Salad
Drizzle 3 tablespoons of basil oil and 1 tablespoon of chili oil over the salad mixture. Gently toss all the ingredients together until well combined.

Serve
Taste the salad and adjust seasoning if necessary. Serve immediately or refrigerate for 30 minutes to allow flavors to meld before serving.
