Method

Preparation of Dry Ingredients

  1. 1

    Mix Dry Ingredients

In a mixing bowl, combine the chestnut flour, baking powder, sugar, and salt. Whisk them together until well combined.

Preparation of Wet Ingredients

  1. 2

    Blend Wet Ingredients

In another bowl, mix the ricotta cheese with the water and olive oil until smooth and creamy.

Combine Ingredients

  1. 3

    Combine Mixtures

Gradually add the wet ingredients to the dry ingredients, stirring gently to avoid lumps. Mix until just combined.

Add Flavor

  1. 4

    Add Rosemary and Pine Nuts

Fold in the fresh rosemary leaves and pine nuts into the batter. Ensure they are evenly distributed.

Bake the Neccio

  1. 5

    Prepare to Bake

Preheat your oven to 180°C (350°F). Grease a baking pan or line it with parchment paper.

  2. 6

    Bake

Pour the batter into the prepared baking pan and smooth the top. Bake in the preheated oven for about 30-35 minutes or until the edges are golden and a toothpick comes out clean.

Cooling and Serving

  1. 7

    Cool and Serve

Once baked, allow the Neccio to cool in the pan for 10 minutes before transferring to a wire rack. Serve warm or at room temperature, optionally drizzled with more olive oil.
