Dough Preparation

    Activate Yeast

    In a small bowl, combine warm water, sugar, and yeast. Let it sit for about 5-10 minutes until frothy.

    Mix Dough

    In a large mixing bowl, combine flour and salt. Make a well in the center and add the activated yeast mixture, olive oil, and eggs. Mix until a dough forms.

    Knead Dough

    Turn the dough onto a floured surface and knead for about 8-10 minutes until smooth and elastic.

    First Rise

    Place the kneaded dough in a greased bowl, cover with a clean cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

Filling Preparation

    Prepare Vegetables

    In a skillet, heat a little olive oil over medium heat. Add zucchini, bell pepper, and spinach. Sauté for 5-7 minutes until softened. Season with Italian herbs and set aside to cool.

    In a large bowl, combine the sautéed vegetables, grated Parmesan cheese, and sliced black olives. Mix well.

Assembly and Baking

    Shape the Dough

    Once the dough has risen, punch it down and turn it out onto a floured surface. Roll it out into a rectangle about 1/2 inch thick.

    Spread the vegetable filling evenly over the dough. Roll the dough tightly into a log starting from one long side.
