Method

Peach Puree

    Prepare the Peaches

    Wash and slice the fresh peaches, removing the pits.

    Cook the Peaches

    In a saucepan, combine the sliced peaches, sugar, and lemon juice. Cook over medium heat for 10 minutes, stirring occasionally, until the peaches are soft.

    Blend the Mixture

    Remove the saucepan from heat and let it cool slightly. Transfer the mixture to a blender and blend until smooth. Strain through a fine-mesh sieve if desired for a smoother puree.

    Chill the Puree

    Refrigerate the peach puree for at least 30 minutes before serving.

Serving the Drink

    Prepare Glasses

    Chill your serving glasses in the freezer for about 10 minutes.

    Combine Puree and Wine

    In a large pitcher, combine the chilled peach puree with the Santoni sparkling wine. Stir gently to mix.

    Pour and Top with Franciacorta

    Pour the mixture into the chilled glasses, filling them halfway. Top each glass with Franciacorta Bellavista for an added sparkle.

    Garnish and Serve

    Garnish with a slice of peach on the rim of the glass if desired. Serve immediately and enjoy!
