    Prep the Ingredients

    Peel and chop the carrots and potatoes into bite-sized pieces. Dice the onion and finely chop the garlic. Clean the wild mushrooms and cut them into strips if they are large.

    Sauté the Vegetables

    In a large skillet or Dutch oven, heat the olive oil over medium heat. Add the chopped onions and garlic and sauté until translucent, about 3-4 minutes.

    Add the Root Vegetables

    Stir in the carrots and potatoes, season with salt and black pepper, and cook for another 5-7 minutes until they start to soften.

    Brown the Chicken

    Push the vegetables to the side of the skillet and place the chicken thighs in the center. Brown the chicken on both sides, about 4-5 minutes per side.

    Incorporate the Mushrooms

    Once the chicken is browned, add the wild mushrooms to the skillet and cook for another 3-4 minutes, allowing them to release their moisture.

    Deglaze with Red Wine

    Pour the red wine over the chicken and vegetables, scraping the bottom of the skillet to incorporate any browned bits. Bring to a simmer.

    Add Berries and Thyme

    Stir in the fresh red berries and thyme, cover the skillet, and reduce the heat to low. Let it simmer for about 25-30 minutes, or until the chicken is cooked through and the vegetables are tender.

Serving

    Plate and Serve

    Once done, carefully remove the chicken and vegetables from the skillet and serve hot. Garnish with additional fresh berries, if desired.
