    Make the crust

    Preheat the oven to 350°F (175°C). Crush the graham crackers into fine crumbs. In a mixing bowl, combine the graham cracker crumbs, sugar, and melted butter. Mix until well combined. Press the mixture into the bottom of a 9-inch springform pan. Bake for 10 minutes, then set aside to cool.

    Prepare the cheesecake filling

    In a large mixing bowl, beat the cream cheese until smooth. Gradually add the sugar and mix until well combined. Add the vanilla extract and sour cream, mixing until smooth. Beat in the eggs one at a time, mixing just until combined. Pour the filling over the prepared crust.

    Bake the cheesecake

    Bake in the preheated oven for 50-60 minutes, or until the center is set but still slightly jiggly. Turn off the oven and leave the cheesecake inside for an additional hour. Remove from the oven and let cool to room temperature, then refrigerate for at least 4 hours or until chilled.

    Prepare the strawberry topping

    In a bowl, combine fresh strawberries, sugar, and lemon juice. Let sit for about 15-20 minutes to allow the strawberries to release their juices.
