Method

Cooking the Pasta

  1. 1

    Cook the Penne

Bring a large pot of salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Drain and set aside.

Preparing the Sauce

  1. 2

    Sauté the Vegetables

In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1 minute until fragrant. Add the sliced mushrooms and bell pepper, and cook for about 5-7 minutes until softened.

  2. 3

    Add Spinach and Tomatoes

Stir in the fresh spinach and halved cherry tomatoes. Cook until the spinach wilts and the tomatoes begin to soften, about 3-4 minutes.

  3. 4

    Season the Mixture

Add the Italian seasoning, salt, and black pepper. Stir to combine well.

Combining and Serving

  1. 5

    Combine Pasta and Sauce

Add the cooked penne pasta to the skillet and toss to coat with the vegetable mixture. If necessary, add a splash of pasta water to help combine.

  2. 6

    Serve with Cheese

Remove from heat and stir in the grated Parmesan cheese until melted. Serve warm and enjoy your Penne Bosco!
