Gelato Preparation

Make the Gelato Base

In a saucepan, combine the whole milk, heavy cream, and sugar. Heat over medium heat until the sugar dissolves. In a bowl, whisk the egg yolks. Gradually pour the warm milk mixture into the egg yolks, whisking constantly. Return the mixture to the saucepan and cook over low heat until it thickens slightly. Remove from heat and stir in the vanilla extract. Chill the mixture in the refrigerator for at least 4 hours.

Churn the Gelato

Once chilled, pour the mixture into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency. Transfer to a container and freeze until firm.

Sorbet Preparation

Prepare the Sorbet Base

In a saucepan, combine the water and sugar. Heat over medium heat, stirring until the sugar dissolves. Remove from heat and let cool. Add the fruit puree and lemon juice, and mix well.

Churn the Sorbet

Pour the mixture into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency. Transfer to a container and freeze until firm.
