Preheat the Oven
Preheat your oven to 325°F (160°C).

Prepare the Cheesecake Mixture
In a large mixing bowl, beat the cream cheese until smooth. Gradually add the granulated sugar and mix until combined. Add the sour cream and vanilla extract, mixing well. Add the eggs one at a time, mixing on low speed until just combined. Finally, fold in the strawberry puree.

Bake the Cheesecake
Pour the cheesecake mixture into a greased 9-inch springform pan. Bake in the preheated oven for about 50-60 minutes, or until the center is set but still slightly jiggly.

Cool and Chill
Turn off the oven and crack the door, letting the cheesecake cool in the oven for 1 hour. Afterward, refrigerate for at least 4 hours, or overnight for best results.

Serve
Once chilled, remove the cheesecake from the pan. Serve with fresh sliced strawberries and whipped cream on top.
