Make the Crust
Preheat the oven to 350°F (175°C). Crush the Oreo cookies in a food processor until they resemble fine crumbs. In a bowl, mix the crushed cookies with melted butter until well combined. Press the mixture firmly into the bottom of a 9-inch springform pan. Bake for 10 minutes, then remove and let cool.

Prepare the Filling
In a large mixing bowl, beat the cream cheese until smooth. Gradually add the sugar and mix until well blended. Add the sour cream, cocoa powder, and vanilla extract; mix until fully combined. One at a time, add the eggs, mixing on low speed until just combined. Fold in the chocolate chips.

Combine and Bake
Pour the filling into the cooled Oreo crust, spreading it evenly. Bake in the preheated oven for 50-60 minutes or until the edges are set and the center is slightly jiggly. Turn off the oven, crack the door, and let the cheesecake cool in the oven for 1 hour.

Chill and Serve
Remove the cheesecake from the oven, then refrigerate for at least 4 hours or overnight before serving. Carefully remove the sides of the springform pan, slice, and enjoy!
